Peppermint cookies...

Last weekend Sude's gymnastics team had a Holiday Party at an ice skating rink. I ended up baking a lemon cake and peppermint cookies. The cookie recipe is from Better Homes and Gardens Christmas Cookies edition. They are called "Choco-mint blossoms"



Ingredients:

1/2 cup butter, softened
1/2 cup shortening
1 cup sugar
3/4 cup Dutch process cocoa powder
2 teaspoons baking powder
1 egg
2 tablespoon milk
1 teaspoon peppermint extract
1.5 cups of flour
Peppermint swirl candy kisses

Beat butter, shortening, and sugar. Add egg, cocoa, baking powder, mint and peppermint extract. Add flour and mix until all blended. Then make 1 inch balls and put them on a cookie sheet. Bake at 350 for 10 minutes.


By the way, I did clean my oven ultimately...

A minute or two after it is out of the oven, put the peppermint kisses on them. If you do it too early, they may melt and loose their shape. After I put them in, I moved the cookies from the sheet to the counter. I think it is almost time for me to get a cooling rack...


Do not dare to touch them for a while. They look happy but they are almost melted. An hour later, they were fine... I put them to the refrigerator over night. I also made a lemon cake with lemon custard icing.

The party was a success and I had a happy ice skater...
