Tornadoes and birthday cakes...

Last week we had major tornado scare. The kids were at school and I had to sit in the closet for almost an hour.

We ended up not getting a tornado but we got major hail... (see below)


After we got home from school, all activities were cancelled. We decided to bake a birthday cake for one of Sude's coaches... This is how it looked at the end...


It was a very creative process... I wanted to make it fun for Sude...

After we mixed up a box of yellow cake we split it up to 3 bowls and made three colors of batter, her choices...
- brown (added cocoa powder)
- pink (added food coloring)
- green (added food coloring)

We poured them to the pan randomly and Sude used a knife to swirl the cake batter to mix the colors further...You can see in there a cake created by an artist...(At least that's what she says)


I applied a new trick that I have learned and it WORKS.... I did not want to have a dome on my cake. Usually I cut off the dome to make the cake flat but I did not want to loose any cake that way. There are always more kids at the gym who are interested in cake...

I washed a kitchen towel and wrapped the cake pan with it and baked the cake that way. Sure enough, it worked and I had an evenly raised cake...

I made the cream cheese icing myself. A proven and yummy recipe...
- 1 stick of butter
- 1 pack of cream cheese
- 2 cups of powdered sugar
- 1 teaspoon of vanilla
- In my case, pink food coloring

I had to do the icing myself the next day when she was at school.
The cake was a huge hit. It is a shame I don't have a picture of the slices... (No surprise there)

Spring is here: Ice cream cup cakes


I have not been baking lately... I don't know why...
I guess you kind of get out of the habit.

Since Sude has moved up a level at gymnastics, I have been meaning to bake a treat for the team. Finally last week I ended up making these ice cream cup cakes.

This was a simple recipe, well I guess no recipe... I used boxed chocolate fudge cake and store bought cherry icing (baking Gods would be mad)

You need to fill out the ice cream cones by 3/4 with the cake batter, not more... Then bake them at 350 until the cupcakes are done. Then decorate with icing like it is a cone of chocolate ice cream.

Kids enjoyed them and it was easy enough to get me eased into baking again...

Chocolate/Tea Cake

This is a great chocolate cake. It has wonderful flavors of tea, cocoa, and cinnamon. I recently made it for a friend who had a back surgery. It is a dense cake that goes very well with tea or coffee...


Ingredients:
4 eggs
1.5 cups of sugar
2 sticks of butter (melted)
3 cups of flour
1 cup of tea (made with 2 tea bags)
5 tablespoons of cocoa
1 teaspoons of cinnamon
1 teaspoon of baking powder
1 teaspoon of vanilla

Take the eggs out of the refrigerator so that they are at room temperature. Beat the eggs until they are fluffy. Slowly add the sugar. Add 1 cup of the flour, cocoa, cinnamon, baking powder and vanilla. Mix until they are well blended. Add the cup of tea while the mixer is still mixing the batter. Add the remaining flour (2 cups) while mixing. At the end, add the melted butter.
Bake at 360 for 45 minutes...

Hamburger cup cakes...

One of Sude's gymnastics team members moved to Hawaii...Few weeks ago, we had a "See you soon" party for her at a hamburger place that is close to the gym after practice. I thought making hamburger cupcakes would be a good idea...
I used boxed ingredients all the way. I made vanilla cupcakes for the bun...

I made brownies for the patties. I cut them with small size cookie cutters...

I mixed cream cheese icing with different food coloring to make ketchup, mustard and "lettuce". I then sliced the cupcakes in half and squeezed the ketchup and mustard icing to the bottom.

I placed the patty on top...

Then some green icing...

Then I brushed them with some water and sprinkled them with sesame seeds. They were a big hit. The hardest part was to make the ketchup color this time. For some reason, I had the play with the tone of the red to get the right color.
They were all gone by the end of the night...

Chocolate espresso cake

For Thanksgiving, I made a chocolate espresso cake as a dessert. Recipe was from Nigella Lawson's cookbook; Feast.
The look of the cake was not very good but it tasted delicious. I served it by topping it with whip cream mixed with instant coffee. We ate it few days after Thanksgiving with coffee and it was still very good. It is dense and goes great with coffee.



Ingredients
5 oz bittersweet chocolate
1 stick plus 3 tablespoons of butter
6 eggs
1.25 cups powder sugar
1teaspoon of vanilla extract
0.5 cups of flour
2 Starbucks instant coffee pockets
0.5 cups of coffee liqueur like Tia Maria

Bring all ingredients, especially eggs to room temperature. Beat the eggs with sugar and vanilla until thick and fluffy.
Melt the chocolate and butter and let them cool. Preheat oven at 350 and butter a 9 inch spring form. Gently fold the flour and instant coffee to the eggs and add the hook ate mix last. Make sure the mixture do not loose it's fluffiness.


Pour it to the spring form and bake for 40 minutes.
I topped it with whip cream mixed with one packet of instant coffee...

Orange chocolate cake

I made a cake for a dinner party last Friday. It is from Nigella Lawson's cookbook; Feast.
I have been getting cookbooks from the library and trying out at least one recipe from each cookbook.
This recipe is simple but rich and also somewhat unusual since it is made with ground almonds. If you replace sugar with sweeteners, it would be great for friends who are on a diet...


Here is the recipe...

Ingredients:
2 small oranges
6 eggs
2 cups of ground almonds
1.25 cups of powder sugar
1/2 cup of unsweetened cocoa
1 heaped teaspoon baking powder

Fill up a pot with water and boil the two oranges for two hours (You can do this the day before you bake the cake). The cut the oranges in half and check for seeds. If there is any, clean them up, if not cut the oranges to big chunks and process them in food processor (the whole oranges with skin and everything)

Then add all the other ingredients including eggs (no need to beat the eggs in advance)
Pour into a buttered cake pan and bake 45 minutes at 350. Check with a toothpick if it is done. You may have to bake some more if not done.
Cool off the cake and then take it off the pan.
I served it with a gallop of whip cream. It was very very yummy...

Carnival (popcorn, hotdog, and fries) birthday cake...

This year Sude had a carnival themed birthday party.
I will have a separate post with the party details and the pictures later.

But a separate post MUST be dedicated to the cake. It was so much fun to make it.
I have browsed the web for a while to find the perfect cake. After combining ideas from different places, I decided to make a cake that is made of 3 items; a popcorn bag filled with popcorn, a hot dog, and french fries.



Ingredients:
3 boxed rainbow cakes
5 white vanilla icing (store bought cups)
4 packets of fruit roll ups
4 tablespoon of corn syrup
1 bag of mini marshmallows
2 teaspoons of cocoa
Green and yellow sugar candies
Food colorings

I have started with baking 3 rainbow cakes the day before I assembled the cake;
2 of them in  13" X 9" pans
1 smaller pan but still rectangular (the cake needs to be thicker for the hot dog)

I used the two bigger cakes to assemble the popcorn bag.
-  I started with cutting off the edges of each cake.
-  Then I split the cakes into two equal parts from the middle.
-  Then I put 4 cake pieces on top each other and sliced off the sides to make it shape like a popcorn bag. (I kept the scrapings to be used to make the hot dog)


- Then I spread icing between every layer and also on top. You can put the cake into refrigerator after the first layer of icing to cover the popcorn bag which would make it easier to spread the second layer.


The icing does not have to be perfect since it is a "popcorn bag". Mine wrinkled a little bit while I was working on it.
-  Then, I used fruit roll ups to make the bag's red stripes.


-  Then I put my kids to work to make the popcorn. You will need a bag of mini marshmallows. I used kitchen scissors to slit the edge of each marshmallow. You need to snip the edge of the marshmallow twice (rotate the scissors 90 degrees after the first cut) to give it a popcorn look.
-  Next I mixed yellow food coloring to a few table spoons of corn syrup. With a toothpick, you can paint some part of the popcorn to yellow so that it would have a butter effect. I painted the inside of the cuts (kids and my husband helped a lot). This is up to you, you can keep the marshmallows white, but they looked very nice with the "butter".
- While kids were coloring the popcorn, I took the smaller cake and shaped like a hot dog bun (see the next picture). I kept the center cake that I cut off to be used to make the french fries.

-  Then I covered the hot dog bun with white icing and refrigerated it for 10 minutes or so.
-  Then I placed all of the marshmallows on top of the bag. Actually Korman did most of that. He may have eaten some of them while working hard... It was a tough job after all.


- While the cake was in the refrigerator, I added a little bit brown coloring to the icing to make the a bun color. I covered the bun with that icing.
- Next, I prepared the hot dog. I used all of the cake scrapes left over from the popcorn bag. I added 1/2 cup of icing, 2 teaspoons of cocoa, a little bit of red food coloring to the cake crumbles and mixed it up in a bowl. I let it sit in the refrigerator until it was firmer and more manageable. Then I rolled it to make it a hot dog and placed it into the bun.


Then I started decorating;
- Yellow and green chopped candy for relish and onions
- Mustard color icing (use yellow, orange, and little green)


- Next, it was time for the french fries. I cut up the middle leftover cake piece from the hot dog bun to french fries shape pieces. I placed them to the top shelf of the oven with broiler on. It only took few minutes to brown them, so you need to be careful. I rotated them few times to make sure all sides were baked. Then I arranged them like french fries.


- Last but not least, I made ketchup with corn syrup and red/green food coloring. But if I had to do this again, I would use icing to make the ketchup for the hot dog. It was the right consistency for the fries but it did not work as well for the hot dog.

The final product was still remarkable...

Korman's 6th Birthday...

Before I post more pictures of out vacation in Turkey, I have to post some more recent photos. Korman had his birthday in Turkey but did not have a party since we were on our road trip. After we came back we had a party for him that he has been wishing for. He had a pirate treasure chest cake made by yours truly which turned out pretty good.

He was happy with it also...

He had his favorite friends over. I made pizza and they just enjoyed the pool.

Then they all lined up to watch him open his presents...
He had lots of fun and got lots of nice toys and Lego's...

Birthday cake...

This year neither Korman nor Sude did have a birthday party. After school started, as promised we had a birthday party for them. First, they were supposed to have their own but somehow they were willing to have one together. I wanted to make the cake this year. I have found a recipe in the web that was a good fit to our summer vacation; a sand castle cake.

I have failed to take some pictures when I started but it is mostly there. It turned out pretty good and it tasted great...


Instead of all vanilla cakes, I used 1 vanilla and 2 chocolate cakes. I had to use more vanilla icing than the recipe called for to cover the chocolate cake.


To give the sand castle effect, I used crushed vanilla wafers.


Then graham crackers, rock shaped chocolates, and pearl candy.
