We grill a a lot of skinless boneless chicken thighs in our house. It is easy to marinate them in soy sauce and throw them to the grill.
This time, I wanted to try something different. This was our Sunday dinner and it was very tasty. More work than grilling for sure, but I think a candidate to become a family staple.
Ingredients:
1 cup all-purpose flour for coating
Salt and pepper for coating
8 pieces of skinless boneless chicken thighs (I used two packets of Costco organic chicken)
Sunflower oil to fry
1 onion, thinly sliced
2 cloves garlic, chopped
1 red bell pepper, thinly sliced
1 (14.5 ounce) can whole tomatoes (dice them yourself)
1/2 teaspoon dried oregano
1/2 cup red wine
salt and pepper to taste
You need to coat the chicken with flour, salt, and pepper mixture. Then fry them with little sunflower oil. Then, take them out of the pan...
Add onions, garlic, and red peppers, saute them until they are tender. Add the tomatoes, oregano, red wine, salt, and pepper.
Then add the chicken. Cover it and let it simmer in low heat for 30 minutes.
I served it over pasta but i would probably be very nice with roasted potatoes too.
It was really tasty. I ate the left overs for lunch two days in a row and I usually do not like leftover chicken.
