I found a recipe in the Allrecipies web site but I ended up changing bunch of things and make it my own.
Korman loved it and Sude was "OK" with it. It turned out a little spicy for her taste but Korman had a second plate. So go figure...
I made this dish in the morning and we heated up for dinner. It was still very good.
Tuesday's are crazy for us with drama, swimming, and dance. It is nice to come home for a dinner that is ready to be eaten...
Ingredients:
1 medium onion, chopped
3 stalks of green onions, chopped
2 chicken sausages, skin taken out
1 can of Rotel
1 tomato, diced (I used a handfull of grape tomatoes)
1 cup of rice
1.5 cups of water (I would have used chicken broth if I had any)
1 tablespoon chopped parsley
Salt to taste
Brown the chopped onions in a skillet with a tablespoon of olive oil.
Add the sausage and cook it thoroughly.
Add the diced tomatoes, parsley, and a can of Rotel. Let it simmer for few minutes.
Add the rice, broth/water, and salt. Bring to boil, then reduce heat and let it simmer until the rice is tender. And done...
